.. buying 4-way Cisco access points doesn't magically give you good Wifi, you also need a slight clue about antenna positioning.. ;-)

There's a reason those antennas have a flexible joint.. all four should ideally point in different directions for maximum coverage.
I mentally facepawed each time I saw one of those beauties on a high ceiling, with all four sticks pointing straight out. I'm sure the Wifi would have been wonderful if you climbed up to the girders, but that's not where the crowd usually is. Please go and make them antennas bend over :-)

The wifi was too crappy for 3ds in front of the main stage entrance the sponsors use. Not really good in the open stage area in general

I noticed this as well (especially in the dealers den) and I might poke them about it.
But essentially that's their own home turf, literally, and thus their decision. There might be reasons from 'in our case this indeed works better' to 'yes, we know, but it would look too ugly' - I don't know.
